Fresh Swedish potatoes

Fresh Swedish potatoes

In Stockholm, it’s that time of year. Fresh, delicious, Swedish potatoes. Get them in the neighborhood grocery stores, dirt and all. I’ve never seen them sold like this in the U.S. Maybe I’m living in the wrong places. In Sweden, I gorge on these.

  1. Many varieties are grown but they’re never named. Swedish potatoes are nothing like russets. They’re small, dense, thin-skinned, and almost sweet. Always boiled, but Swedes are very particular about doneness. Servable with almost everything (maybe not pasta!). Also delicious cold.

  2. Not enough info. What are they like? Similar to Russets? Yukons? How do you fix them?
